Trading Post: Peachy treats to wrap up summer

A baked peach pie is one of the highlights of summer, but you don’t need to heat up the house to make some sweet treats with fresh peaches.

The icebox peach pie recipe below, shared by Rita Sidener of Springfield, calls for cream cheese, whipped topping, instant pudding and peaches.

From Joyce Fikri of the Springfield office of the St. Louis District Dairy Council, the second recipe is a quick blender drink made with peaches, milk, ice and flavorings.

Both recipes are quick, cool and peachy keen.

Peaches-N-Cream Pie

1 (8-ounce) package cream cheese, softened
2 tablespoons sugar
2 tablespoons milk
3 cups whipped topping, thawed
1 baked 9-inch pie shell, cooled (or cookie crust)
3 medium peaches, peeled, pitted and sliced
1 (4-serving) package vanilla or lemon flavor instant pudding and pie filling
13/4 cup cold milk

Beat cream cheese until smooth; blend in sugar and 2 tablespoons milk. Fold in 2 cups whipped topping and spread mixture into crust. Top with peach slices and press down into cream cheese mixture.

Prepare pie filling with milk as directed on package. Let stand (to thicken) 5 minutes. Fold in remaining whipped topping and spoon over cream cheese and peaches. Freeze 1 hour or chill in refrigerator 3 hours before serving.

Makes 6 to 8 servings.

Peach-Amaretto Frappe

1 cup fat-free or lowfat milk
1 large ripe peach, peeled, pitted and cut into eighths, or 2 canned peach halves, drained
5 to 6 ice cubes
2 tablespoons brown sugar
1/4 teaspoon almond extract

Combine all ingredients in a blender. Blend at high speed until smooth and foamy, about 1 minute. Pour into a chilled glass and serve.

Makes 1 serving.
